Vinification:
Hand picking and sorting of grapes. Optical sorting of destemmed grapes. Cold maceration at 8 ºС in heat-insulated stainless steel wine fermentation tanks of 7000 l each. Controlled alcoholic fermentation with long post-fermentation maceration. Spontaneous malolactic fermentation.
