Vinification:
The cooled grapes go through a vibration table for hand selection. Destemmed grapes are sorted on a conveyor belt and are then fed into a 3- cubic meter pneumatic "Inertis" press where the whole destemmed grapes are being pressed up to 1, 2 Bar. Grape juice is then clarified and is left to ferment at temperature of 12-15˚С. Clarification and stabilization.
